Matthew began his working life as a chef, fortunate to have worked with some of the UK's finest chefs, He became increasingly drawn to patisserie and bread making which has shaped the past 25 years of his career as a baker. In 2013 Matthew opened the bakery at Borough Market. He began producing breads seven days a week, supplying the market stall and a number of local restaurants.
Inspired by our travels, childhood favourites and of course by our customers we continue to innovate, experiment and produce outstanding bakes everyday.
We still employ the same methods in the bakery today, but we've increased the scale somewhat over the years to now serve our multiple shops and restaurant across London.
Our approach is simple; seasonal quality ingredients that speak for themselves. We believe that every bake we produce should look and taste exceptional, from the first bite to the last crumb.
Everything we produce at Bread Ahead is developed with the same artisanal approach. Whether it's classic french patisserie or a humble loaf of bread, our produce delivers.
We favour traditional recipes at Bread Ahead and our sweets are no different. You'll find classic British bakes from sticky ginger cake to hot cross buns as well as a few favourites from our travels.
An essential part of producing excellent quality and delicious sweets is refining recipes so that every ingredient is considered. You won't find anything artificial in our bakes, we firmly believe when you put the ingredients front and centre the end result will always taste fantastic.
We opened our first bakery school in 2014, what started with just one table in our Borough bakery has grown to five classrooms in three locations across London and our first international bakery school in Jeddah, Saudi Arabia.
However, the principle remains the same; teaching bakers of all levels the art of creating the best quality bakes at home.
Almost ten years later we now offer over 30 different workshops from half day croissant classes to our most extensive three day complete sourdough baking course. No matter the topic or the length of the class we share our knowledge and tips as seasoned bakers that will serve our students when they return home to their own kitchens.
Every Bread Ahead location has its own unique identity. As a brand we believe that our shops, restaurants and bakery schools should each tell our story and their own.
Our first and primary location in Borough Market has very much set the tone for all sites within the Bread Ahead family. From the elaborate displays to the fresh from the oven approach we adopt in all of our menus.
Our restaurants tailor their menus to offer the signature Bread Ahead elements; fresh breads, slow baked dishes and of course excellent desserts. We do however encourage each site to offer its own signature dishes. Our restaurant in Wembley serves stone baked sourdough pizzas and decadent hot sandwiches. Pavilion Road offer our New York inspired sourdough pizza by the slice and our newly opened Tea House caters to a more refined approach in celeberating the art of afternoon tea.
